We (2 of us) joined the group class, upon arrival, Chef Lee took the class to a local market nearby. She introduced us some local ingredients, and the tricks to pick fresh and healthy ingredients. What substitutes we can use when we replicate the dishes at home.
To cook each dishes, Chef will first go thru all ingredients with us, we can touch and smell the special herbs being used. And then, she will demonstrate how to do the prep works, then show us the cooking procedures. We will then go to our station and cook our own dishes. We learnt a total of 12 recipes during class!

9) Holy Basil Chicken
10) Ma-sa-man Curry Chicken

All of them taste YUM!
Chef can speak very good English, so no worry it may be difficult to communicate. What impressed us is we are making most of the dishes from scratch (making own coconut cream, coconut milk, curry paste, etc.)
I believe Chef herself has a very healthy lifestyle, as she kept on emphasizing the importance of using good ingredients (why coconut oil, palm sugar is good for cooking; avoid using MSG, always use fresh lime juice, etc.) We always want to cook fresh and healthy meals for our family, so we loved the way she taught, really practical!
My boyfriend was a bit sick when we had the class, his stomach not feeling too well. Chef made him and the rest of the class some drinks with herbs. It was a nice offer :).
