If you only have a few days in Bangkok, Chef Leez’ class is an excellent, practical way to learn about Thai cuisine, culture, socio-political climate (etc.etc.), and sample a range of different Thai dishes (including desserts) in just shy of 4 hours. The class is as entertaining as it is informative and Chef Leez is one of the wittiest, passionate, professional, hard-working people you’ll ever meet. Our class learned how to prepare 7 or 8 dishes and what to look for in raw ingredients. It is not assumed that you have any previous experience with cooking (including knife skills), but you do use sharp knives and a very hot gas stove. It’s important to be comfortable with both ahead of time. You are supplied an apron, but you may not want to wear nice clothes just the same. All dishes can be made vegetarian (3 out of the 4 of us didn’t eat meat, shrimp, eggs or fish), but I’m not sure if everything can be made vegan. Folks with severe peanut and shellfish allergies may want to be careful, too. Chef Leez is extremely accommodating, but she’ll need to know in advance what dietary restrictions you have.
