100g of watercress nutritionally outperforms 100g of other leafy veggies like cabbage, spinach, rocket, iceberg and as such is a super food.
This plant is super easy to grow as it will usually regenerate if a piece of its stem hits soil and receives water.
It is tasteless, and replaces leafy greens in everything from smoothies to salads.
We now have a 1 meter by 12 meter stretch of Chef Lee’s home herb garden dedicated to 50% green watercress and 50% to red watercress.
Trimming the tops 10 cm or so seems to be the best way to harvest the leaves with continued plant growth. Optionally we have tried harvesting the entire plant and replant the tops. and that works as well. We use watercress to hold the soil to vertical cliff side of our raised garden. So pulling the entire plant disrupts the garden’s vertical soil. Which is better? Time will tell.
After removing the leaves from the stem and washing them in food safe detergent we replant the near leafless stems. A new plant grows to be harvested in 30 to 45 days.
10 green tops and 10 red tops yield near 200 grams. This is the base leaf of our morning smoothie. It yields of 4 to 5 cups when blended with the other healthy smoothie ingredients. Cabbage, carrot, peas, broccoli, cauliflower, string bean, pineapple, banana, sometimes apple and oranges all find their way into a Chef Lee’s morning smoothie
You get the picture, Watercress goes with everything and is a super leaf!
