Cashew Tofu Stir Fry

Ingredients

50 g tofu
1/2 tspn soy sauce
25 g shitaki mushroom
25 g jews ear mushroom
1 (10 cm) dry bannna chili
2 tsp chpopped garlic
1/4 tsp brown or cane sugar
1 ( 10 cm) long spring onion
25 g cashew nuts
1 tbsp tomato paste or ketchup
1/2 tbsp chili sauce
50 g white onions
15 g corn flower

 

Additional Information

 

Stir in the cashew nuts and crispy fried chilies. Add tomato paste, chili sauce and stir to mix.

Instructions

  1. Heat oil in wok. Fry dry chili until fragrant and crispy.
  2. Remove from oil and set aside.
  3. In the same wok, heat leftover oil and fry the garlic until fragrant. Add the tofu, shitaki & jews ear mushroom, stir fry for about 3 minutes until cooked. Add the onion and season with soy sauce, sugar, pepper and mix well.
  4. Stir in the cashew nuts and crispy fried chilies.
  5. Add tomato paste, chili sauce and stir to mix.
  6. Serve hot on a serving platter, garnish with spring onion.
