Green Curry Paste

Ingredients

2 green bird-eye chilies
1 green banana chilies
2 tsp chopped shallots
2 tsp chopped garlic cloves
¼ tsp finely sliced galangal
½ tsp finely chopped lemon grass
1/8 tsp roasted coriander seeds
1 small coriander root
pinch of pepper
1/8 tsp roasted cumin
¼ tsp shrimp paste
¼ tsp sea salt
¼ sliced kaffir lime rind

 

Additional Information

 

Pound chilies and salt thoroughly, add the coriander root, galangal, lemon grass, kaffir lime rind, balance of ingredients excluding the garlic, shallots and shrimp paste pound till mixed well.

Instructions

  1. Combine coriander seeds, cumin, and peppercorns in a mortar to obtain a fine paste.
  2. Pound chilies and salt thoroughly, add the coriander root, galangal, lemon grass, kaffir lime rind, balance of ingredients excluding the garlic, shallots and shrimp paste pound till mixed well.
  3. Add the garlic and shallots pound till mixed well then add the shrimp paste and pound to a smooth, fine mixture.
