Minced Shrimp Sauce

Ingredients

1/2 cup minced prawn
1/2 cup minced pork
1 3/4 cups coconut milk
1/4 cup ground roasted peanuts
1 dried red spur chili, seeded and soaked in water ( 2min)
1 tbsp garlic finely sliced, 1 tsp coriander root finely sliced
1/4 tsp pepper
2 tbsp sugar
1-2 tbsp fish sauce or soy sauce
4 cups deep frying cooking oil

 

Additional Information

 

In a mortar with a pistol pound the garlic, coriander root, dried chili and pepper to fine paste.

Instructions

  1. In a mortar with a pistol pound the garlic, coriander root, dried chili and pepper to fine paste.
  2. Over medium heat bring the coconut milk to a boil. When the film of oil surfaces add the coriander paste and saute till fragrant. Add the minced prawns and pork, stir to mix and cook thoroughly.
  3. Season to taste with fish sauce or soay sauce and sugar, stir well. Bring to a boil, stir in peanut and shallots. Remove from the heat, sprinkle fresh coriander over the surface.
