½ cup coarsely chopped chicken breast or tenderloin
10 cm of spring onion cut to 2 cm lengths
½ tbsp coriander stalk, coarsely chopped
2 tbsp mint leaf
1 large shallot, thinly sliced
½ tbsp ground roasted rice or breadcrumbs
pinch of salt
1 tbsp lime juice
1 tsp fish sauce

Season to taste with lime juice and fish sauce. Sprinkle chili powder and ground roasted rice over the mixture and mix well. Add spring onion, coriander and mint leaves. Toss lightly
