Yellow Curry Chicken

Ingredients

50 g sliced chicken
¼ cup coconut cream
1 tbsp brown sugar
1-2 tbsp small sliced cucumber
1 cup coconut milk
1 tbsp vinegar
2 tsp fish or soy sauce
½ tbsp red banana pepper chili
½ tsp palm sugar
½ tbsp sliced shallots
50 g white potato
pinch of sea salt
1 ½ tbsp yellow curry paste

 

Additional Information

 

Add the potatoes and boil over medium heat until they are cooked, add remaining fish sauce and sugar, remove from heat & serve.

Instructions

  1. Pour coconut cream in a pan and place over medium heat. Stir until oil separates from the coconut cream.
  2. Add curry paste and stir until fragrant, add the chicken, stirring occasionally until cooked.
  3. Move pan contents to a pot and add the coconut milk.
  4. Add the potatoes and boil over medium heat until they are cooked, add remaining fish sauce and sugar, remove from heat & serve.
