Spicy Mushroom Salad

Ingredients

500 g oyster and straw mushroom sauce
1/4 tsp salt
1/4cup water
1/4 tsp chili powder
1 tbsp soy sauce
1 tbsp lime juice
1 tbsp rice powder
25 g thinly sliced shallots
1 spring onion (chopped)
1/4 cup mint leaf
2 springs coriander (cilantro) leaves, chopped

Instructions

  1. Put the cleaned mushrooms and salt in a pot, fry over medium heat until the mushrooms changes color.
  2. Turn off the heat, add shallot (reserve some for garnish), toss well.
  3. Season to taste with lime juice and soy sauce. Sprinkle chili powder and ground roasted rice over the mixture and mix well.
  4. Add spring onion, coriander and mint leaf, toss lightly.
  5. Arrange on a serving dish, sprinkle the remaining sliced shallots on top. Serve with fresh vegetables. Squeeze teh juice onto the mushrooms and shrimps.
  6. Stir in the lime juice, soy sauce, chilies and shallots, mix well.
  7. Add spring onions, coriander leaves and serve.
